These cookies are my sister's ABSOLUTE favorite! They are so soft, yet rich and delicious. You can make the dough a day ahead because it needs to chill in the fridge for a minimum of 3 hours before baking.
Ingredients:
1 stick of softened unsalted butter
1 1/3 cups sugar
4 eggs
1 Tbsp. vanilla extract
2 cups all purpose flour
1 cup of sifted cocoa powder (unsweetened)
1/2 tsp. salt
2 tsp. baking powder
1 cup powdered sugar (for rolling the dough in)
In the bowl of a standing mixer, cream together the butter and sugar until it is fluffy.
Add in your eggs (one at a time) and vanilla. Mix for a couple of minutes.
In a separate bowl, briefly mix together the flour, cocoa powder, salt, and baking powder. Slowly at the dry ingredients to your wet mixture.
Mix on low until fully incorporated (about 1 minute). Cover the dough and chill in the fridge for a minimum of 3 hours. Overnight works great!
Preheat the oven to 350 degrees. Line a couple of baking sheets with parchment paper.
Using a 1 1/2 Tbsp. ice cream scoop, form your dough into balls. Roll each dough ball in some powdered sugar and put on your baking sheet.
These need to make for about 13-18 minutes. Keep your eye on them. Sometimes it may take longer! :) Enjoy!
