Poppy Seed Chicken

This recipe originally came from my sister's mother-in-law. (If you're reading, thank you so much Jodie!) We have been making this recipe for years, and I don't know a single person who doesn't love it! Serve with some mashed potatoes and a veggie and BOOM. You'll have a great dinner!

Ingredients:

  • 1 rotisserie chicken, picked apart

  • 8 oz. sour cream

  • 1 can of cream of chicken soup (you can use cream of mushroom instead if you'd like)

  • 1 Tbsp. poppy seeds

  • 1 1/2 cups Ritz cracker crumbs

  • 1 stick of melted butter


  1. Preheat your oven to 350 degrees. Spray a 9 x 13 inch casserole dish with nonstick cooking spray.

  2. In a large bowl, mix together the picked apart chicken, sour cream, cream of chicken soup, and poppy seeds. Pour the mixture into your casserole dish.

  3. In a bowl, mix together the melted butter and Ritz cracker crumbs.

  4. Evenly spread the crumb mixture on top of the casserole.

  5. Bake for 30 minutes.
