Potato Casserole

I make this for Easter, Thanksgiving, Christmas, etc. It is so easy, and it requires just a handful of ingredients you may already have on hand!





Ingredients:

  • 1 bag (32 oz.) of frozen has browns (you can use the cubes or shredded)

  • 1/2 stick of butter, diced

  • 8 oz. sour cream

  • 1 can of cream of chicken (or cream of mushroom) soup

  • 2 cups of shredded cheddar cheese, plus a little more for the top

  • 1/4 cup bacon bits (or use as much as you want!)

  • 1 tsp. dried chives (optional)

  • Salt & pepper, to taste


  1. Preheat the oven to 350 degrees. Spray a 9 x 13 inch casserole dish with nonstick cooking spray.

  2. Begin with frozen potatoes. There is no need to thaw them.

  3. Mix everything together (except for the butter) in a large bowl.

  4. Pour your mixture into the prepared casserole dish. Sprinkle the top with a little extra cheese. Scatter the diced butter on the top.

  5. Bake for 1 - 1 1/2 hours.
