"Less is More." That is what I think of when I make this pasta. The ingredient list is so small, but when you use tomatoes that are in season, you can't beat it! :) This is a recipe that I make very often every summer when the tomatoes are perfect! I love this recipe because it has 5 ingredients and literally takes about 10 minutes to put together.
Ingredients:
8-10 Roma tomatoes, diced (or about 3 cups of cherry or grape tomatoes)- use any tomato that want!
2 Tbsp. extra virgin olive oil
2 cloves of garlic, sliced
A little less than half a pound of pasta (use any kind you like!)
Salt/pepper, to taste
In a large pot, bring some salted water to a boil.
In a large skillet on medium heat, add the olive oil and garlic and cook for about a minute or two. Don't let the garlic burn!
Add in the tomatoes, salt, and pepper. Let this cook for 5-7 minutes, or until a sauce forms.
Cook the pasta in the boiling water according to the package directions.
Serve the sauce on top of your pasta. IT IS SO GOOD!
